Chow Chow Relish
Delicious! You might want to wear gloves when you are preparing the peppers because some of them can burn your skin.
Ingredients
2 quarts of chopped cabbage
5 C. chopped onion
4 C. chopped green tomatoes
4 C. chopped green peppers
2 C. chopped red peppers
6 Tbls. salt
4 C. sugar
5 C. white vinegar
4 tsp. dry mustard
1 1/2 tsp. ground ginger
4 tsp. celery seed
2 tsp. mustard seed
Instructions
- Combine Vegetables.
- Sprinkle with salt.
- Let stand 4-6 hours in cool place.
- Drain well.
- Combine vinegar, sugar, and spices.
- Simmer 10 minutes and add vegetables.
- Simmer 10 minutes more.
- Bring to a boil.
- Pack boiling hot mixture into hot pint size canning jars.
- Process in canner for 10 minutes. (Follow directions on your canner).
