Hot Chicken

This chicken is delicious!

Ingredients

  • 1 whole chicken, washed and dried

  • Kosher salt and black pepper

  • 1 C whole milk

  • 2 large eggs

  • 1 tablespoon hot sauce

  • 2 C all-purpose flour

  • Sea Salt

  • 12 cups peanut oil

  • 1/2 C hot peanut oil

  • 3 T. cayenne pepper

  • 1 T. light brown sugar

  • Sea salt and black pepper

  • 1/2 t. paprika

  • 1/2 t. garlic powder

Instructions

  1. Sprinkle washed and dried chicken with kosher salt and black pepper. Cover and refrigerate 4 hours to overnight.
  2. For the dip:  Mix milk, eggs, and hot sauce.  Set aside.
  3. For the dredge: Mix flour and sea salt. Set aside.
  4. For the spicy coating:  Mix 1/2 C. hot oil, 3 T cayenne pepper, 1 T. brown sugar, salt and pepper, paprika, garlic powder.  Set aside.
  5. Take chicken pieces and dredge through the flour, then dip into milk mixture, and back into flour mixture.  Drop into hot oil and cook until crisp and done.  For bone in chicken it should take about 15 minutes for small pieces and 20 minutes for breasts.
  6. Right before serving brush spicy coating mixture over both sides of the chicken.  Serve while hot.
