Mae’s Coconut Pie

Coconut Pie

My grandmother was Mae O'Donnell.  She was a great cook and a great grandmother!

Ingredients

  • 1/2 C. sugar

  • 1/4 C. flour

  • 1/4 tsp salt

  • 1 1/2 C. scalded milk

  • 3 eggs

  • 2 Tbls butter

  • 1/2 tsp vanilla extract

  • 8 inch pie shell

  • 1/2 C. coconut

  • 6 Tbls sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix flour, 1/2 C. sugar, and salt in the top of a double boiler.
  3. Add scalded milk and stir well.
  4. Cook over medium heat until thick and smooth, stirring constantly.
  5. Beat egg yolks well, stir in a little of the hot mixture and gradually pour into boiler.
  6. Cook over medium heat for 2 minutes stirring constantly.
  7. Remove from heat, stir in butter and vanilla.
  8. Beat egg whites until light and then gradually beat in 6 Tbls of sugar until stiff. 
  9. Fold 1/3 of meringue into the cooled filling. 
  10. Pour filling into cooled pie shell.
  11. Spread remaining meringue over the filling making sure to touch the edges all the way around.
  12. Bake at 350 degrees for 12-15 minutes or until golden brown.
  13. Cool and serve.
