Oatmeal Cake
Oatmeal Cake
I got this recipe from my sister many years ago.
Ingredients
1 C. quick oatmeal
1/2 C. butter or margarine
1 1/4 C. boiling water
2 eggs
1 1/3 C. plain flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. baking soda
1 tsp. vanilla
1 C. brown sugar
1 C. white sugar
1/4 C. evaporated milk
1/4 C. butter or margarine
1 C. brown sugar
1/2 C. coconut
1/2 C. chopped pecans
Instructions
- Mix oatmeal, margarine in boiling water until butter melts.
- Remove from heat.
- Cool slightly.
- Add eggs and mix well.
- Add flour, cinnamon, nutmeg, salt, baking soda, vanilla, and sugars and mix well.
- Bake at 350 degrees for 25 to 30 minutes.
For Frosting: 1/4 C. evaporated milk, 1/4 C. brown sugar, 1/2 C. coconut, 1/2 C. chopped pecans. Cream butter and sugar then bring to a boil. Add nuts and coconut. Pour over hot cake and then put under broiler until it starts to bubble.
