Rice Risotto

Ingredients
1 C. rice
1/2 stick margarine or butter
1 tsp. salt
1 medium onion, chopped
1 can of beef consomme
1 small can chopped mushrooms (optional)
Instructions
- Preheat oven to 350 degrees.
- Melt margarine in saucepan. Add rice, onion, and brown.
- Place 1 can beef consomme in casserole dish. Add 1 can of water.
- Add rice and onion mixture. Add mushrooms if desired.
- Add salt and stir.
- Cover and bake at 350 degrees for 1 hour.
- Serves 6-8.
