Squash Casserole
Another Favorite of Rusty's.
Ingredients
3 C. Cornbread Stuffing
1/4 C. melted butter
1 can cream of chicken soup
1/2 C. sour cream
4 yellow squash
1/4 C. shredded carrott
1/2 C. cheddar cheese
1/4 C. onion
Instructions
- Mix stuffing and butter. Spoon all but 1/2 C. into 9 X 13" baking pan.
- Slice squash and cook in sauce pan with carrots and onion until tender. Drain really well and set aside.
- Mix together sour cream, soup, squash mixture, and cheese.
- Spread evenly over stuffing.
- Bake at 350 degrees for 40 minutes or until hot.
