Squash Cassserole

Squash Casserole

Another Favorite of Rusty's.

Ingredients

  • 3 C. Cornbread Stuffing

  • 1/4 C. melted butter

  • 1 can cream of chicken soup

  • 1/2 C. sour cream

  • 4 yellow squash

  • 1/4 C. shredded carrott

  • 1/2 C. cheddar cheese

  • 1/4 C. onion

Instructions

  1. Mix stuffing and butter.  Spoon all but 1/2 C. into 9 X 13"  baking pan.
  2. Slice squash and cook in sauce pan with carrots and onion until tender.  Drain really well and set aside.
  3. Mix together sour cream, soup, squash mixture, and cheese.
  4. Spread evenly over stuffing.
  5. Bake at 350 degrees for 40 minutes or until hot.
